Spanish Style Pork Ribs with Sherry Vinagrette

    Spanish Style Pork Ribs with Sherry Vinagrette

    Ingredients

    • 2 strips of ribs
    • 1 tablespoon thyme
    • 1 tablespoon olive oil
    • 1 tablespoon of Paprika
    • 4 garlic cloves
    • Salt and pepper to taste
    • Seasoning:
    • 10 tablespoons of extra virgin olive oil
    • 3 tablespoons of sherry vinegar
    • 1 tablespoon Dijon mustard
    • 1 tablespoon honey
    • 1 tablespoon thyme
    • 1 clove of garlic

    Method

    1. Rub the ribs with oil, thyme, paprika, minced garlic, salt and pepper. Cover and chill overnight.
    2. Prepare the grill to cook with direct heat (approximately 170ºC – 190ºC).
    3. Individually wrap each rib in aluminum foil and place packets meat-side up and cover grill, turning packets every 10 minutes to ensure even cooking. After 1 hour, remove the ribs from the grill and let them rest (still wrapped) for 15 minutes.
    4. To finish, remove the ribs and spread 2 tablespoons of sherry vinaigrette. Grill for 10 to 15 minutes, allowing the meat to burn slightly. Enjoy!
