    Peri peri Ox liver

    Ingredients

    • 600g ox liver
    • 500g plum tomato (Blended)
    • 2 whole onions finely diced
    • 10g garlic
    • 10ml oil
    • 5 sprigs of curry leaves
    • 2 tablespoon curry powder masala
    • 2 chillies chopped
    • Pinch of salt
    • 1 teaspoon sugar

    Method

    Sauce
    Sauté onions, add garlic, curry leaves, curry powder and cook off for a few minutes, add puréed tomatoes, salt and gently simmer for 30 minutes, add teaspoon sugar

    Liver
    Cut liver into small medallions season the liver, and sear on a hot grid until medium. Add onto spicy tomato sauce topped with caramelized onions!
