Peri peri Ox liver
Ingredients
- 600g ox liver
- 500g plum tomato (Blended)
- 2 whole onions finely diced
- 10g garlic
- 10ml oil
- 5 sprigs of curry leaves
- 2 tablespoon curry powder masala
- 2 chillies chopped
- Pinch of salt
- 1 teaspoon sugar

Sauce
Sauté onions, add garlic, curry leaves, curry powder and cook off for a few minutes, add puréed tomatoes, salt and gently simmer for 30 minutes, add teaspoon sugar

Liver
Cut liver into small medallions season the liver, and sear on a hot grid until medium. Add onto spicy tomato sauce topped with caramelized onions!
