Butterflied Beef with Roasted Pumpkin, Broccoli and Potatoes

Delicious veal recipe that can be prepared both in the oven and on the barbecue. What better recipe to warm up the body a bit on these cold days?

    Butterflied Beef with Roasted Pumpkin, Broccoli and Potatoes

    Ingredients

    • 1 kg of beef
    • 1/4 kg pumpkin
    • 2 medium potatoes
    • 500 grams of broccoli
    • Extra virgin olive oil
    • Sea salt and pepper
    • 2 garlic cloves, minced

    Method

    Preheat the oven to 200ºC. Seal the meat on all sides in a pan with olive oil and, in the meantime, dice the pumpkin and potato. Place the sealed meat on a baking tray and cook for fifteen minutes. Then, add the pumpkin and the potatoes cut into cubes and seasoned.

    Let it cook for another fifteen minutes and add the broccoli. Cook another 15-20 minutes more, until the vegetables and meat are tender and serve.
