Beef Dumplings Recipe

    Beef Dumplings Recipe

    Ingredients

    • For the filling:
    • 250 grams or ½ pound of ground beef
    • 4 green onions
    • 1 large carrot or 2 medium carrots
    • ½ cup green peas
    • 6 cloves garlic
    • 2/4 cup mushrooms
    • 1 tablespoon of soy sauce
    • 1 tablespoon of dry sherry
    • ¼ cup beef stock or water
    • 1 teaspoon salt
    • 2 teaspoon ginger
    • ¼ teaspoon black pepper
    • 1 tablespoon sesame oil
    • vegetable oil
    • For the dough:
    • 4 cups all-purpose flour (500 gr)
    • 1 teaspoon salt
    • 1 ¼ cups warm water (300ml)
    • For the sauce:
    • ¼ cup rice wine vinegar (60ml)
    • ¼ cup soy sauce (60ml)
    • 1 teaspoon sesame oil
    • 1 teaspoon crushed red pepper flake

    Method

    • Combine in a large bowl the flour, salt and warm water and mix until they’re well combined.
    • Put the dough on a floured surface and knead until it’s smooth.
    • Divide it into 4 equal parts. Then roll out one of the pieces until it become a thin log and divide it again into 8 pieces. Repeat until you have done the same with all the dough.
    • Lightly flour the dough pieces and turn them into a thin circle. It has to be 10 cm (4 inches) diameter. Do it with all the little pieces of dough and keep them divided with parchment paper meanwhile.
    • To make the filling, put the ground beef into a bowl and mixed it with the beef stock, soy sauce, sherry wine and all the spices (salt, pepper, ginger). You can do this and reserve the mixture for later if you want.
    • When you are ready to prepare the dumplings, add the sesame oil to the beef with the vegetables and mushrooms finely chopped.
    • Take one of the dough circles and put about 1 or 1.5 tablespoon of filling in the center. Hold the dumpling with one hand and seal the edges with the other. After folding be sure you press the edges again to seal well. There are several ways of folding the dumplings, you can use the one that suits you best. It doesn’t matter which one you choose at all.
    • Heat 1 tablespoon of oil in a skillet over medium heat until it’s hot. Cook the dumpling in batches, depending on the size of the skillet. You have to cook them until the bottom side turns golden and then add 2 tablespoons of water and cover, so they are fully cooked by steam. It will take 2-3 minutes.
    • Combine well in a small bowl all the ingredients for the sauce. Serve with the dumpling and enjoy!
